My journey to food blogging began in an unlikely place: a hospital dietitian’s office. After completing my nutrition degree, I spent five years counseling patients with chronic health conditions. While I loved helping people transform their health, I quickly discovered that handing out standard meal plans rarely led to lasting change. What people needed wasn’t just nutritional information—they needed inspiration and practical ways to fall in love with nutrient-dense foods.
This realization led me to launch Fresh Pantry Vibes in 2019, creating a space where wellness and joy could coexist on the same plate. My approach to cooking centers on what I call “vibrant simplicity”—colorful, flavorful meals built around whole foods that don’t require hours in the kitchen or obscure ingredients.
Growing up in a multicultural household (my father is from Jamaica, my mother from Korea) taught me that healthy cooking doesn’t have to be bland or boring. Some of my earliest food memories involve helping my grandmother toast spices for curry or watching my mother ferment kimchi in our Seattle kitchen. These experiences showed me how global flavors and techniques can transform simple ingredients into something extraordinary.
When I’m not developing recipes in my sunny Portland apartment, you might find me browsing farmers markets, teaching cooking workshops at our local community center, or hiking Pacific Northwest trails with my partner Alex and our energetic Australian shepherd, Mango. I’m also passionate about food sustainability and work closely with local urban farming initiatives to promote food accessibility in underserved neighborhoods.
My recipes reflect my educational background in nutrition while honoring my belief that eating well should bring pleasure. You won’t find rigid rules or food guilt here—just thoughtfully crafted recipes that happen to be good for you.
